Ingredients

  • 6-8 tablespoons ice water

For the Blueberry Filling:

  • 6 cups fresh blueberries
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg

For Assembly:

  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

Prepare the Crust:

  1. Mix Dry Ingredients:

    • In a large bowl, whisk together the flour, sugar, and salt.
  2. Incorporate Butter:

    • Add the chilled cannabis-infused butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
  3. Add Water:

    • Gradually add ice water, 1 tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Filling:

  1. Mix Filling Ingredients:
    • In a large bowl, combine the blueberries, sugar, cornstarch, lemon juice, lemon zest, cinnamon, salt, and nutmeg. Toss gently to coat the berries evenly.

Assemble the Pie:

  1. Roll Out Dough:

    • Preheat your oven to 400°F (200°C). On a floured surface, roll out one disk of dough to fit a 9-inch pie dish. Transfer the dough to the pie dish, allowing the excess to hang over the edges.
  2. Add Filling:

    • Pour the blueberry filling into the crust.
  3. Top Crust:

    • Roll out the second disk of dough and place it over the filling. Trim the excess dough and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
  4. Egg Wash and Sugar:

    • Brush the top crust with the beaten egg and sprinkle with coarse sugar.

Bake the Pie:

  1. Bake:

    • Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling. If the edges start to brown too quickly, cover them with foil.
  2. Cool:

    • Let the pie cool completely on a wire rack before serving to allow the filling to set.
