Elevated Strawberry Shortcake

trawberry shortcake is a timeless dessert that's perfect for summer. By incorporating our cannabis-infused butter, you can add a unique and relaxing twist to this classic treat. This recipe will guide you through making an elevated version of strawberry shortcake, plus two delightful variations.

Ingredients

For the Shortcakes:

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold cannabis-infused butter (see our canna-butter recipe), cubed
  • 2/3 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Strawberries:

  • 1 pound fresh strawberries, hulled and sliced
  • 1/4 cup sugar
  • 1 tablespoon lemon juice

For the Whipped Cream:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Strawberries:

    • In a large bowl, combine the sliced strawberries, sugar, and lemon juice. Toss to coat and set aside to macerate while you prepare the shortcakes.
  2. Make the Shortcakes:

    • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
    • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    • Add the cold cannabis-infused butter to the flour mixture and use a pastry cutter or your fingers to cut it into the flour until the mixture resembles coarse crumbs.
    • In a separate bowl, whisk together the heavy cream, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
    • Turn the dough out onto a floured surface and gently knead a few times until it comes together. Pat the dough into a 1-inch thick circle and use a biscuit cutter to cut out shortcakes. Place the shortcakes on the prepared baking sheet.
    • Brush the tops with a little heavy cream and sprinkle with sugar. Bake for 15-18 minutes, until golden brown. Allow to cool on a wire rack.
  3. Prepare the Whipped Cream:

    • In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  4. Assemble the Shortcakes:

    • Slice the shortcakes in half horizontally. Spoon a generous amount of macerated strawberries onto the bottom half, top with a dollop of whipped cream, and place the top half of the shortcake on top. Add more strawberries and whipped cream if desired.

Variation 1: Chocolate Strawberry Shortcake

For a chocolate twist, add 1/4 cup of cocoa powder to the dry ingredients when making the shortcakes. Additionally, you can fold 1/2 cup of mini chocolate chips into the dough before baking. The rich chocolate flavor pairs beautifully with the sweet, juicy strawberries and the creamy whipped topping.

Variation 2: Lemon Basil Strawberry Shortcake

For a refreshing and aromatic variation, add 1 tablespoon of finely grated lemon zest to the dry ingredients when making the shortcakes. Mix 2 tablespoons of finely chopped fresh basil into the macerated strawberries. The bright lemon and fresh basil flavors will enhance the natural sweetness of the strawberries, creating a delightful and sophisticated dessert.
