Ingredients

  • 1 pound fresh clams, scrubbed
  • 4 ounces chorizo, casing removed, chopped
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, finely chopped
  • 2 teaspoons smoked paprika
  • 4 cups fresh or frozen corn kernels (from about 6 ears of corn)
  • 2 cups diced Yukon Gold potatoes
  • 4 cups chicken broth
  • 1 cup unsweetened coconut milk
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Prepare the Clams:

    • In a large pot, bring 1 cup of water to a boil. Add the clams, cover, and cook until they open, about 5-7 minutes. Discard any that do not open. Remove the clams from their shells and set aside. Strain the cooking liquid through a fine sieve and set aside.
  2. Cook the Chorizo:

    • In a large pot or Dutch oven, heat the cannabis-infused olive oil over medium heat. Add the chopped chorizo and cook, stirring occasionally, until it begins to brown and render its fat, about 5 minutes.
  3. Sauté the Vegetables:

    • Add the onion, garlic, and red bell pepper to the pot with the chorizo. Cook until the vegetables are softened, about 5 minutes. Stir in the smoked paprika and cook for an additional minute.
  4. Add Corn and Potatoes:

    • Add the corn, potatoes, reserved clam cooking liquid, and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
  5. Finish the Chowder:

    • Stir in the coconut milk and season with salt and pepper to taste. Add the clams back to the pot and cook until heated through, about 2 minutes.
  6. Serve:

    • Ladle the chowder into bowls and top with chopped fresh cilantro. Serve with lime wedges on the side for squeezing over the top.
