Boosted Thai Rainbow Peanut Noodles

These Thai Rainbow Peanut Noodles are bursting with fresh flavors and vibrant colors, making them a perfect meal for any time of year. Ingredients:

  • 8 oz rice noodles
  • 1 cup purple cabbage, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1/2 cup edamame, shelled
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, chopped
  • 1/4 cup peanuts, chopped
  • OPTIONAL - add cooked protein of choice

For the Peanut Sauce:

  • 1/4 cup creamy peanut butter
  • 2 tablespoons cannabis-infused olive oil (see our canna-oil recipe)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sriracha (optional, for heat)
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, grated

Instructions:

  1. Cook the Noodles:

    • Prepare the rice noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
  2. Prepare the Vegetables:

    • In a large mixing bowl, combine the sliced purple cabbage, red and yellow bell peppers, julienned carrot, edamame, chopped cilantro, and green onions.
  3. Make the Peanut Sauce:

    • In a small bowl, whisk together the peanut butter, cannabis-infused olive oil, soy sauce, lime juice, rice vinegar, honey or maple syrup, sriracha (if using), minced garlic, and grated ginger until smooth and well combined.
